Established in 1991, the Alta Alella estate has been organic since its beginnings, and has always aimed to create a beautifully balanced ecosystem that respects the native flora and fauna. A family owned and run winery, it is the closest winery to Barcelona, just up the coast from the city. Very close to the sea, the vineyards enjoy cooling sea breezes (and a stunning view).
The grape varieties for this Cava are the traditional Pansa Blanca (Xarel·lo) - Macabeu - Parellada, grown on southeast facing sandy soils. The wine is fermented in stainless steel, and then sees a minimum of 30 months ageing on its lees in the traditional method,, for maximum texture and flavour. There are 0g of dosage added - making this Cava a Brut Nature bottling, extremely dry and refreshing. The disgorgement date is stated on the label, so it’s possible to see exactly how long each bottle has been aged for before release.
