The Domaine Bernard Baudry Chinon is 100% Cabernet Franc, from 30 year old vines planted near the village of Cravant-les-Coteaux. The grapes are hand harvested, 100% destemmed and gravity-fed into cement tanks for fermentation, which occurs with natural yeasts. The wine then spends 15 months in a mix of cement and wood tank before it is bottled, unfiltered.
Bernard Baudry was born into a winemaking family in Chinon, and, after studying oenology in Beaune, started making his own wines in 1982, with just two hectares. Now, he has 30 hectares, across six different sites, each blessed with its own unique soil types and terroir. Bernard works without artificial herbicides and pesticides, and tends his vineyards as manually as possible. His son Matthieu has been working alongside him for the last twenty years, and will one day take over the reins.
