Rémi started his career in hospitality early, as a teenager in his native France. He moved to Bristol in his twenties to work with and learn from the great Gerard Basset at Le Hotel du Vin. Rémi went on to oversee the opening of the Hotel du Vin in York.
After four years with the Hotel du Vin team, Rémi joined Isa Bal and Heston Blumenthal at the three Michelin-starred The Fat Duck in Bray. He was there for eight years, before moving to Michel Roux Jr’s Michelin-starred Le Gavroche as Head Sommelier in 2016.
“It’s a pleasure to work alongside Michel, he’s in Le Gavroche almost every single day, and he’s a huge inspiration,” says Rémi. “At Le Gavroche I have the opportunity to choose from an incredible library of wines, and the privilege to put wines on the list only when I feel they are mature and good to drink.”
