Somm in the Must came together in 2016 after two sommeliers and friends shared a common vision of winemaking. They established close relationships with family-owned wineries who share the same values, and began to work together to make a unique range of wines, each from a different winery and vineyard.
During a visit to Mathias Schödl’s winery in Loidesthal, Austria, the Somms found just three rows of Samling 88 vines at the end of a Gruner Veltliner vineyard. Organically grown, the grapes are hand harvested, and destemmed before 6 hours skin contact maceration. Spontaneous fermentation takes place in stainless steel tank and third-use French oak barrel. This wine is fully dry - very unusual for Samling 88. Only 1,050 bottles were produced.
