Five generations of the Vallot family have tended the vines here in Vinsobres, a 450m hill in the Cotes du Rhone. In the early 2000s, Francois Vallot began the process of conversion to organics and biodynamics, practices which aim to strengthen the vitality and resistance of the vines and optimising flavour and expression in the wines. Today, Anais is the first woman of the family to head up the winery.
Grenache 65%, Mourvèdre 10%, Syrah 25%, from a south facing limestone vineyard, with warm all day sun tempered by the all important high altitude cooling breezes. The average age of the vines is 50 years old, which lends great complexity to the wine. A combination of ageing techniques used here - the Grenache spends 8 months in old larger oak barrels, the Syrah is in younger smaller oak cask, while the Mourvedre spends 8-10 months in concrete vat.
